Spicy Roast Chicken
Sharpen a knife and wash it properly, or use your best knife.
Open a whole chicken by cutting either the back of it - neck to tail, or the front of it - top of breast to open cavity, in order to make it flat.
Transfer the chicken onto an oven tray.
Wash your hands thoroughly, to remove all the bacteria from your hands.
Prepare the rubbing condiments.
To a pestle and mortar add:
- five cloves of peeled garlic,
- one diced onion,
- three chillies (of your choice, green or red),
- one bay leave,
- some parsley,
- some cayenne pepper,
- a few black peppercorns,
- salt to your own taste, and
- mush it all together. Then, add a bit of olive oil to it (or any oil you have) and stir.
Rub all that onto the entire chicken.
Squeeze half of a lemon over the chicken and let it marinate for a bit before taking it to the pre-heated oven at 200 degrees Celsius, for about 45 minutes, or until the chicken is cooked (cooking time varies depending on the size of the chicken, and the type of oven).
Serve it warm, or cold, with boiled rice, boiled potatoes, chips and a salad of your liking and enjoy! You can used the leftovers to make sandwiches.
