How to make an easy, healthy and tasty chicken soup.

In a deep stock pot, put a whole chicken of the quality you can afford.

Add one celery stalk, three peeled white onions, three carrots, three cloves and one whole garlic bulb (no need to peel).

Fill the pot with cold water, and take to the stove.

Turn the stove on, put the timer on for one and a half hours, at medium temperature. After 1h30min, the chicken is completely cooked.

Then, remove the chicken from the pan into a bowl, sieve the broth into a clean pan and discard the vegetables.

Wash one cup of rice (any rice will be ok, just use the one you have) until the water runs clear, and the add it to the sieved broth. Put the new pan in the stove, to cook the rice. It takes about 20 minutes, depending on the type rice, and the stove you have.

When the rice is soft, add a few pieces of the boiled chicken to the pan. The amount depends on how much chicken you want in your soup.

Add a few sprigs of fresh mint, or dried, if you do not have fresh, add salt to taste, and let it continue to boil for a coupe of minutes.

Turn the stove off and serve, but remember that the soup is still very hot, so...take care, specially if you are giving it to a child, or elderly person.
